Lentil Soup

 
Don't let this soup intimidate you-it's delicious and VERY filling!  We love how customizable and easy this recipe was.  And it makes a tasty meal for any vegetarian/vegan friends!

This recipe can be made with any veggies and spices you have laying around the house, so be creative!  The following recipe is just what we used  :) 

Ingredients
4 potatoes, cubed
1 cup of lentils
2 cups of chicken broth (sub with veggie broth for a vegetarian/vegan option!)
1/2 cup corn
1/2 green onions, sliced
1 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon red pepper flakes
*1/2 teaspoon Tabasco sauce
1/4 teaspoon black pepper
Salt to taste

*We started with 1/2 teaspoon of Tabasco, but after tasting the soup we didn't think it had enough flavor, and applied more liberally, without measuring.

1. Peel the potatoes and cut into small cubes.  Throw into crock pot.
2. Cut the green onions into slices.  Throw into crock pot.
3. Add the lentils, chicken (or veggie!) broth, 2 cups of water, and corn to the crock pot.
4. Add the spices.
5. Cook on low for 6-8 hours.

This recipe was so easy because we just threw everything in the crock pot, went about our day, and when we came home dinner was ready and smelled delicious!  And we love how you can customize it with whatever you have in the kitchen at the time, and it's super filling with the lentils and the potatoes together!
