Loaded Baked Potato Soup

With this cold weather, we couldn't think of anything we'd rather eat than loaded baked potato soup! We just threw the ingredients in the crock pot and enjoyed!

Ingredients
About 4 potatoes
1 cup shredded cheddar cheese
6 slices of bacon (or pre-cooked bacon crumbles!)
1/4 cup green onions
2 teaspoons garlic powder
3/4 cup heavy cream (or 1 cup of milk)
2 cups chicken broth 

1. Cook the bacon, and crumble when cool.  Or you can use pre-cooked bacon crumbles like we did and just throw them in the crock pot!
2. Peel the potato skins.  Cut each potato into 1 inch cubes.
3. Slice the green onions into 1/2 inch pieces.
4. Throw the bacon, potatoes, green onions, garlic powder, and chicken broth in the crock pot and cook on low heat for about 6 hours.
5. When potatoes are soft, scoop out 2 cups and mash them in a separate bowl.
6. Add the heavy cream or milk to the mashed potatoes and combine well.  Throw this potato mixture back into the crock pot and stir to combine.  This will make the soup thicker and give it a more potato-y taste!
7. Throw the cheese into the crock pot when you're almost ready to eat.  Stir the cheese into the soup quickly to disperse it, and then let it melt.
8. When cheese is melted, serve your soup and top with more bacon, cheese, green onions, sour cream--anything you like on top of a baked potato!

This recipe was perfect for this weather!  The crock pot allowed us to do work all day, and it was so tasty and warm at night!  This recipe will definitely be made often here!
