Potato Pasta Bake

This is originally a Martha Stewart recipe.  We made it only because we had all of the ingredients already, but it was so delicious!

Ingredients
Pasta
1 can crushed tomatoes
4 potatoes
1/2 an onion
2 tablespoons oregano
1 cup grated Parmesan cheese
Salt and pepper
 
1. Lightly oil a 9x13 baking dish.  Arrange half of the pasta on the bottom of the dish.  We used shell pasta, but you can use any kind!  Simply cover the bottom of the dish with pasta in a single layer.
2. Add 1/3 of the tomatoes on top of the pasta.  Sprinkle with 1 tablespoon of oregano.
3. Wash and peel the potatoes.  Slice the potatoes into 1/8 inch slices.  Add a single layer of potato slices on top of the tomatoes.
4. Chop onion into small pieces.  Add chopped onion on top of the potatoes.  Sprinkle 1/2 cup of Parmesan cheese on top.
5. Season with 2 teaspoons of salt and 1/4 teaspoon of pepper.
6. Add another layer of pasta, another 1/3 of the tomatoes, 1 tablespoon of oregano, and another layer of potatoes.
7. Season with 2 teaspoons of salt and 1/4 teaspoon of pepper.
8. Top with remaining tomatoes.
9. Boil 2 cups of water in a separate pot.
10. Place baking dish on a rimmed baking sheet.  Carefully pour the hot water into the dish until it comes up to the top layer of potatoes.
11. Cover dish with foil and cook at 400 degrees for 1 hour (until liquid is absorbed).
12. Remove foil and top with the remaining 1/2 cup of Parmesan cheese.  
13. Bake for 20 minutes, or until browned.  Let stand for 10 minutes before serving.
 
This dish really was a treat!  We thought combining potatoes, pasta, and tomatoes sounded weird at first, but it really came out well.  In Martha we trust!
