Lattice Top Chicken


This is a recipe that our mom taught us, and it has always been one of our favorites!  We always ask for this when we're sick, or homesick.  It's our go-to meal!
 
Ingredients
Chicken breasts
Mixed veggies (this time we used broccoli, carrots, and celery)
Cream of Chicken soup
Milk
Shredded cheddar cheese
French fried onions
1 package crescent rolls
 
1. Cook chicken breasts over medium heat until fully cooked.
2. Chop chicken breasts and mixed veggies.  Ratio should be 1:1 of everything.
3. In a large bowl, combine chopped chicken and veggies, the can of Cream of Chicken soup, half a can of milk, and a handful of cheddar cheese.  Stir well.  Add about half the can of french fried onions.
4. Transfer mixture to a baking dish, and cook for 30 minutes on 350 degrees.
5. Unroll the package of crescent rolls.  Push all of the lacerations together to create one sheet of dough.  Cut the dough into equal strips long-ways (we had 5 strips).
6. Remove casserole dish from oven.  Place 3 dough strips long-ways over the mixture.  Cut the remaining dough slices in half and place the 4 shorter slices across the already placed dough (this creates the lattice).
7. Bake the dish again for about 15 minutes, or until the dough on top is slightly brown.
8. Remove dish from oven, and top with the rest of the French fried onions and the cheese.  Bake again for about 5 minutes (until cheese is melted).  Serve hot!
 
This is such a simple meal, but honestly one of our favorites!  The mixed veggies can always change, but we always use broccoli and a crunchy but flavorless veggie (celery or water chestnuts) as a minimum.  Hope you enjoy our favorite home-cooked meal!
