Carmelized Pineapple Slices

These make a fantastic side dish to any meal!  Traditionally grilled, we made them in a frying pan instead and the result was just as yummy!  The recipe came from Mary's friend, Tara, who has her own awesome food blog.  Check it out here!

Ingredients
Pineapple slices
2 tablespoons honey
1 teaspoon olive oil
1 tablespoon lime juice
1 teaspoon cinnamon
1. Combine honey, olive oil, lime juice, and cinnamon in a small bowl and stir well.
2. Dip pineapple slices in bowl to cover each side with the marinade.
3. Place dipped pineapple slices in frying pan and cook over medium heat for about 5 minutes, or until the pineapples have a nice glazed look, flipping frequently.

This recipe was awesome!  We love pineapple, and the spices really brought out a nice flavor.  We served this as a side dish with our garlic lime chicken, and the whole meal was delicioso!  Also try this same recipe on the grill, but the frying pan was just so convenient!
