Winter Salad and Balsamic Vingarette

Winter Salad with Balsamic Vingarette
This is a great salad with winter fruits that pair nicely together.  Our mom found the original recipe online, and we made some modifications based on our own tastes!
Ingredients
Your choice of lettuce (this one uses a combo of spinach leaves and mixed lettuce)
1 pomegranate
1 Granny Smith apple (or another tart apple of your choice)
1/2 cup of chopped walnuts 
2 ounces of goat cheese
1/3 cup balsamic vinegar
1/2 cup extra virgin olive oil
1 tsp dijon mustard
1 tsp honey
salt
pepper
The Dressing:
1. Combine balsamic vinegar, dijon mustard, and honey in a dressing container.  Shake together vigourously.
2. Add a pinch of salt and a pinch of pepper to the dressing, and shake well.
3. Slowly add the olive oil, and continue to shake the mixture.
The Salad:
1. Remove pomegranate seeds from the fruit.  Measure out 1/4 cup of the seeds and place aside for later use.
2. Roughly chop an apple and put pieces aside for later use. 
3. Toss lettuce, chopped apple, pomegranate seeds, chopped walnuts, and goat cheese together.
This is, like, the perfect salad.  The fruits are in season for the winter, and work nicely with each other giving the salad a sweet and tart flavor.  It's super easy to prepare and looks impressive with the pomegranates and homemade dressing!
