Apple Pie

Apple Pie
This isn't your grandma's apple pie!  It's super easy to make, and tastes delicious!
Ingredients
2 pie crusts (we used Pillsbury)
2 cans of apple
2/3 cup sugar
3 tablespoons flour
2 teaspoons apple pie spice
1 1/2 tablespoons brandy
1 teaspoon vanilla
1 egg yolk
1 tablespoon cream
1. Let the crusts come to room temperature.  Roll out 1 crust and place in a pie pan.  Make sure to press the edges against the pan.
2. Combine sugar, flour, and apple pie spice in a bowl.  Pour in the apples and mix until thoroughly coated.
3. Add brandy and vanilla to the apple mixture, and mix together.
4. Spread the apple mixture onto the pie crust, mounding it slightly in the center.
5. Roll out the second pie crust and place it over the apple filling.  Press the two crusts together.
6. Cut the crust around the pie pan with scissors.
7. Pinch the edges of the crust to make it look pretty.
8. Combine cream and egg yolk in a small bowl.  Brush this mixture evenly over the crust. Make sure to get in between each ridge on the edge too!
9. Cut 4 large slits in the center of the crust in a circle kinda shape.
10. Bake the pie for 20 minutes at 375°.  Reduce the oven to 350°.  Cover the edges of the pie with aluminum foil and bake for another 30 minutes.  
This pie came out so well we just had to share it! There are some shortcuts in there-but they make the baking go by so much quicker and really don't affect the taste at all!  Enjoy!
