M&C's Banana Muffins

Banana Muffins
When Mary was looking for something different to eat for breakfast, we decided to search through our kitchen for something simple and fun to make. We found bananas! We found a recipe for healthier banana nut muffins, and decided to modify the recipe by taking the nuts out so that Caitlin could enjoy them too. We also switched some ingredients from the original recipe because we haven't been to the grocery store yet... 

Ingredients
2 mashed bananas
1 snack pack of Mott's applesauce
2 tablespoons canola oil
1 cup flour
3/4 teaspoon baking soda

1. Combine mashed bananas, apple sauce, oil, flour, and baking soda.
2. Spoon mixture into greased muffin pan.
3. Bake the muffins at 375ยบ for 20 minutes.
4. Remove muffins from pan and cool.

These muffins are tasty, but a little bit bland. Too bad Caitlin can't eat nuts because that would have definitely enriched the flavor. If you want to add nuts, the original recipe calls for 1/4 cup of your favorite kind of nut. We also suggest topping the muffin with butter for a little extra taste. We made 10 small muffins with our recipe, but it can easily make 6 large ones too.  We enjoyed this tasty treat, but are looking for ways to make it a little bit more exciting.
