Cheddary Mashed Potatoes

Cheddary Mashed Potatoes
For dinner tonight we just created a yummy side of mashed potatoes, and grilled some chicken. Simple. We found this recipe from Campbell's Soup in Grandma Collette's recipe box, but as always, changed it up a little.

Ingredients
4 potatoes
2 tablespoons of Olivio
1 can Campbell's broccoli cheddar soup
1/3 cup milk
1/8 teaspoon red pepper

1. Peel and slice the potatoes.
2. Cook the potato slices in boiling water for about 15 minutes.
3. While the potatoes are cooking, heat the Olivio in a skillet on medium heat.
4. Add soup, milk, and pepper to skillet and combine.  Heat mixture to boiling, and then reduce heat to low. Cover and simmer for 5 minutes.
5. While the soup mixture is simmering, drain the potatoes and put them back in the pot.
6. Pour the soup mixture over the potatoes and stir together.

These mashed potatoes turned out great and were so delicious! Very quick and easy to make, but definitely made our simple dinner more exciting. Perfect for a quick meal when your family is as busy as ours! The entire family loved the mashed potatoes and we all went back for seconds. Another idea is to cook the potatoes for a shorter amount of time and serve scalloped potatoes instead. This recipe served three of us as side dishes, with lots left over to heat up later!
