Collette's Shrimp Scampi

Shrimp Scampi
Caitlin had been having shrimp cravings for weeks even though she's not a big seafood-eater, so this was a tasty, light meal to introduce shrimp and was so quick and easy to make! We found this recipe in our Grandma Collette's recipe collection, but edited based on what we had in the kitchen... and what we would eat.

Ingredients
1 teaspoon butter
2 teaspoon Canola oil
1 1/2 teaspoons minced garlic
1 pound of peeled, uncooked mini shrimp
1/4 cup white wine
Juice of 1 lemon
1/4 teaspoon salt
1/4 teaspoon white pepper
Parsley for garnish
1 box of spaghetti

1. Melt butter and oil together in sauté pan. At same time, put on a pot of boiling water for spaghetti.
2. In same pan, sauté garlic for one minute and add shrimp.
3. After another minute, add wine, lemon juice, salt and pepper.
4. Continue cooking while the sauce reduces and the shrimp turns pink.
5. Drain spaghetti and put back in pot. Serve a pile of spaghetti on each plate. Scoop shrimp onto the spaghetti making sure to cover it with the sauce as well. Garnish with parsley.

This served 5 easily. We didn't like parsley on it, but it looked prettier. We, as non-seafood-lovers, thought this was a really great meal and loved the light sauce. Our dad, as an avid seafood-lover, thought it was a little bland, but very tasty. Our brother does not like seafood at all, but we were able to give him the spaghetti with the sauce and no shrimp and he enjoyed that as a twist to a traditional spaghetti meal. All in all, a nice little treat and something new for our family. This was very good as a simple, light dinner. We were happy to have had the wings as an appetizer before-hand.
