Asian Stir Fry

This recipe was so yummy, and so quick and easy to make for all of you on the go!  A perfect mid-week meal! 

Ingredients:
Snap peas
Broccoli florets
Carrots
1/2 Red pepper
1/2 Onion
Cashews
1 tablespoon oil
1 tablespoon water
3 tablespoons soy sauce
3 tablespoons chicken stock
1 teaspoon garlic powder
Steak

1. Cook the steak over medium heat in a frying pan until the steak is fully cooked.
2. While the steak is cooking, chop the broccoli, carrots, and onion into chunky pieces.  Cut the pepper into strips.
3. Combine oil, water, broccoli, pepper, onion, and garlic powder in a skillet over medium heat for 1 minute.
4. Add carrots and cashews and cook for 2 minutes.
5. Whisk together broth and soy sauce in a separate bowl, and add to the veggie mixture.  Cook for 2 minutes.
6. Cut the cooked steak into strips and serve with the veggie stir fry. 

This recipe can be made with any veggies you have laying around the kitchen, in any quantity.  We served this with steak strips and rice, but it can be served with chicken, alone, any way you want!
