Skinny Burrito

One of the things we love the most are burritos, and we can really chow down on them. Tonight we decided to make "skinny" burritos-this recipe is completely delicious and guilt-free!
Ingredients
Ground beef
1/2 an onion
White rice
1 can refried beans
1/2 cup shredded cheddar cheese
1 avocado
Greek yogurt
Tortilla shells
Garlic powder
Lemon Juice
1. Start cooking ground beef in a frying pan.
2. At the same time, chop half an onion into small pieces.  Add onion to the frying pan.  This is important for a couple reasons:  first, it adds yummy, healthy flavor to the beef.  It also allows you to cook less beef, and saving you money.  Cook until the beef is fully cooked and the onions have a nice color.
3. Drain most of, but not all of, the oil from the beef.  Put aside.
4. Heat up the refried beans in a pot.  Add the cheddar cheese.  Keep on heat and stir until the cheese is fully melted.
5. At the same time, put 1 cup of uncooked rice in a separate pot.  Add 1 cup of water.  Let water boil, then cover and let simmer for 5 minutes, or until the water is absorbed.
6. Scoop out the avocado from its shell and put in a small bowl.  Add garlic powder and lemon juice to taste.  Stir together.
7. Put the tortilla shells that you will be using into the microwave for 1 minute.  The tortillas should be soft and pliable.
8. Now for the assembly.  Scoop 1 spoonful of meat, 1 spoonful of rice, and 1 spoonful of beans onto each tortilla shell.  Add guacamole and Greek yogurt.
9. Roll the tortilla, creating your burrito, and place on your plate.  Spread a little of the beans on top, and sprinkle this with cheese.  Stick this in the microwave for 1 minute, or until the cheese is melted.
10. Add a small amount of lettuce to your plate and chow down!
And there you have it-a skinny and delicious, burrito!  Perfect for a lazy night that won't make you feel guilty, or for a lady's burrito night!  Eat clean, get lean!
