Balsamic Glazed Vegetables


Unfortunately, we did not get a picture of these vegetables-they were so good, and we were so hungry! These came out so well and is our new favorite way to cook vegetables!

Ingredients
Mixed vegetables
4 teaspoons olive oil
3 teaspoons balsamic vinegar
1 clove of garlic
Mixed herbs

1. Combine mixed vegetables in a baking dish. We used a couple handfuls of baby carrots, 1 white onion cut into large slices, a handful of grape tomatoes cut in half, and cucumber slices.  This dish would be awesome with any veggies you have laying around!
2. Chop the clove of garlic into small pieces and add them to the baking dish.
3. Add mixed herbs to the baking dish. We used fresh chives, rosemary, and thyme. 
4. Toss everything together with the olive oil and balsamic vinegar.
5. Bake the veggies at 400 degrees for 35 minutes, stirring them every 10 minutes.

These came out so well and make a perfect, healthy side dish!  We even enjoyed the tomatoes and onions cooked this way, and we generally do not even like these veggies!
