Irish Stew

Irish Stew
What's more comforting than a home-cooked soup while a hurricane is blowing in the background?  Nothing.  This is a twist on the traditional Irish stew that our grandma used to make.

Ingredients
Stewing beef
1 cup beef stock
5-6 potatoes
Carrots
Celery
Onions
Mushrooms (not in traditional stew, this was an addition)
1 can of Guinness beer
Mixed spices

1. Put just a little olive oil and flour in the bottom of the crock pot.  Throw the beef on top.
2. Add the beef broth. In our recipe we actually used veggie stock because that's what we had in the pantry. Fill up the rest of the crock pot with water.  
3. Wash the potatoes and cut them into cubes.  Throw them into the crock pot.  Use as many potatoes as you want!
4. Wash and peel the carrots.  Cut them into slices and throw them into the crock pot.
5. Wash the celery and cut into slices and throw in the crock pot.
6. Cut the onions into cubes and throw into the crock pot.  Traditional Irish stew uses 1 can of pearl onions.
7. Throw sliced mushrooms into crock pot (this isn't in traditional Irish stew but we wanted to add them!)
8. Pour in the can of Guinness.
9. Sprinkle mixed spices over everything.  We used basil leaves, oregano, salt, and pepper.  Be creative!
10. Cook everything in the crock pot for 4 hours on high or 6 hours on low. 

This is such a yummy recipe!  It is so easy to make it your own with different ingredients and spices.  The crock pot makes the meat and veggies so tender and it's so easy to just pour everything in and let it cook.  It makes the whole house smell amazing!
