Bob's Halloween Pumpkin Cookies

Pumpkin Cookies
Every Autumn season, our dad makes us these amazing pumpkin cookies. It's the best part of Fall. While home for "hurrication," (thanks, Sandy)we took a stab at making these delectable holiday treats ourselves.

Ingredients
2 cups of flour
1 cup of oatmeal
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 cup soft butter
1 cup brown sugar
1 cup sugar
1 egg
1 tsp vanilla
1 cup pumpkin
1 cup chocolate chips
(1 cup nuts, optional)

1. Combine flour, oats, baking soda, cinnamon, salt, soft butter in bowl.
2. Gradually add sugars beating until light and fluffy.
3. Add egg and vanilla, mix well.
4. Alternate additions of dry ingredients and pumpkin, mix well.
5. Add in the chocolate chips and stir them in. This is the point you would also add in the nuts. We made half with nuts.
6. Put parchment paper on your cookie sheet. Scoop a small spoonful onto the tray. We had 12 cookies per tray. 
7. Put in oven at 350° for 18 minutes. 

This recipe made us 85 cookies. Woah... And we're gonna eat them all by ourselves.
These cookies are heavenly.
