M&C's Pineapple Salsa


Pineapple Salsa
We spent a lot of time gardening this summer and wound up with WAY too many tomatoes. 
We also grew peppers in our garden. So with tomatoes and peppers, of COURSE we're going to make some homemade salsa.

Ingredients
4 Tomatoes
3 Jalapeño Peppers
1/2 a Sweet Onion
3/4 teaspoon of minced Garlic
1/2 20oz can of pineapple chunks... or a 10oz can if they have those.
Cilantro... just a handful of leaves.
1 lime

1. Peel and seed the tomatoes. We cut them into smaller slices (quarters) to peel them and chopped them into chunks from there. Put into a bowl.
2. Dice half an onion. Put in the bowl.
3. Cut the tops of the peppers off and throw those out. Then split the pepper in half hotdog style. Slice each half of the jalapeño. We took out the seeds and the white membrane because we didn't want our salsa too spicy. Then dice the slices. Put these... guess where.
4. Put the garlic in the bowl!
5. Cut the pineapple chunks into even smaller chunks! Just cut into pieces.... put it in the bowl.
6. Squeeeeeeeze the lime juice into the bowl!
7. Slice the cilantro leaves into little bits and put it in the bowl.
8. Now mix it with a spoon.

This was a great way to use all the yummy veggies we grew in our garden. Or fruit? What's a tomato? This makes about one mason jar full of salsa, but we split it in two so Mary could bring some to her new apartment! It's really tasty, especially with the tropical taste of the pineapple. We love it. Congrats Mary and Caitlin, you've done it again.
