Jenny's Fruit Salsa

Jenny's Fruit Salsa
When we were getting ready for our brother's high school graduation party, we decided to try this twist on the classic salsa. We got the recipe from Caitlin's friend, Jenny. It was delicious and super easy to make, as long as you know how to cut a mango!

Ingredients
1 mango
1 red bell pepper
2 kiwi
Green onions
1 jalapeño pepper
1 lime
1 pineapple

1. Peel the mango and cut into 1/4 inch cubes and put in container.
2. Dice bell pepper and put in container.
3. Peel the kiwi and dice.  Place in container.
4. Thinly slice 1/4 cup of green onions and place in container.
5. Zest lime to get 1 teaspoon of zest and pour over other ingredients in container.
6. Squeeze lime to get 1 tablespoon of juice and pour over other ingredients in container.
7. Slice jalapeño and deseed.  Chop jalapeño slices using a food chopper, and add to bowl.
8. Cut pineapple into cubes, and then dice into 1/2 inch cubes.  Add to bowl.
9. Gently stir all ingredients together.
10. Chill until ready to serve.

This was DELICIOUS!  We served it with Tositos chips and Stacy's Cinnamon Sugar chips.  Also try spooning the salsa over grilled or baked chicken!  We enjoyed the salsa for days and will definitely make it again!
