Pink Lemonade Crinkle Cookies

With the summer heat rising we want to make meals and treats that taste lighter.  We found a box of Pillsbury Pink Lemonade Cake mix and were inspired-what would be better than combining one of our favorite cookies with one of our favorite summer flavors?

Ingredients
1 box Pillsbury pink lemonade cake mix
2 eggs
1/3 cup vegetable oil 
1 teaspoon vanilla
Powdered sugar
Confectionery sugar  

1. Mix together the cake mix, eggs, vanilla, and oil until it forms a nice dough.
2. Line a cookie sheet with parchment paper.
3. Roll the dough into 1 inch balls.
4. Roll each ball in a small bowl full of granulated sugar.
5. Roll each sugared ball in a different small bowl full of confectionery sugar.
6. Bake the cookies at 350 degrees for 10-12 minutes, and then let cool on a cooling rack.

Full disclosure:  these cookies are delicious and so light-tasting that you might be tricked into eating an entire batch in one night!
